There is no fixed recipe for minestrone, since it is usually made from any vegetable sezonsezon. This soup can be vegetarian, or one that has conțina.
At first, was part of “cucina povera” and was preparing and the minced Bacon, with a little more hearty, or with any remaining meat from the Christmas Eve table. Today, the most exquisite recipes I suppose to use fresh rabbit meat cut.
We cook today a vegetarian Minestrone.
- 200 g beans from preserve
- 200 g green beans
- 300 ml tomato juice
- 2 carrots
- 2 onions
- 2 Red
- 2 potatoes
- 4-5 slices sliced mushrooms
- salt, pepper
- Put kidney beans in water and lasăm them to soak overnight.
- The next day spalăm them well and put them to boil in 2 l of water.
- If you use canned beans from no longer needed soaking and boiling.
- Reduce by half the cooking time.
- We offer 3 separate hot, 4 tablespoons of the oil in which fry the carrots, mushrooms and onions finely chopped.
- When the beans are almost cooked, add the vegetables, roasted peeled tomatoes finely chopped green beans and diced potatoes.
- When they are all cooked tomato juice and adăgam asezonăm with salt, pepper to taste and season with chopped Basil.
